Fate/Zero is a prequel to Fate/Stay Night, and they do have a few characters in common, but the great majority of the cast in F/Z is different from F/SN, and the stories are pretty separate and self-contained for the most part. So no, you don’t really need to have seen F/SN to understand F/Z, and since F/Z is vastly superior to F/SN in pretty much every way, I definitely recommend just skipping right to F/Z.
FMA: Brotherhood is a completely separate adaptation of the series, sticking much closer to the manga than the first series did. It starts the story over at the very beginning, so no, there is absolutely no need to watch the first FMA series to understand FMA: Brotherhood.

No idea with Fate/Fate Zero, but…
…I know FMA and FMA:B are essentially unrelated. FMA:B was based almost entirely off the manga, where as FMA was not. There is no real relationship between the two. Both are great, however.
FMA answer:
I highly recomend watching the origonal series and then brotherhood… you will be glad you did. While you can still get the just of brotherhood you will not connect to the characters and get more backstory on some of them as you would in the origonal… Watch both… I’m glad I did
