How about a monkey? You can show the transformation and change to humans. However, this may be a controversial one. You can also choose frogs/lizards that change color based on their surroundings. You can also choose animals to change as defense mechanisms. Like porcupine that spikes up when danger is near. Or the puffer fish that does the same.
